Posted: 10/21/03

A gourmet meal, beautiful music and an inspiring talk will set the tone for the first-ever Culinary Extravaganza at the Four Seasons Community Center this Sunday, October 26.

A fund-raising event for the community center, guests will enjoy a gourmet five-course meal prepared by executive chefs Thomas Sacksteder of Gundersen Lutheran and John Haverty of Franciscan Skemp.

The menu for the evening includes an appetizer of roast breast of duck with a creamy cashew port wine sauce, followed by a salad of fresh mixed greens with sweet pepper, grape tomatoes, and English cucumber with strawberry miso dressing and toasted pumpkin seeds.

A fresh fruit sorbet will precede the entree, which includes a choice of beef tenderloin with Sauce Bearnaise or herb-crusted salmon with dill Hollandaise sauce. Entrees will be served with garlic and chive duchess potatoes and green beans almandine.

Pine Ridge cheesecake with red raspberry sauce and whipped cream will be served for dessert.

Guests will have the pleasure of listening to music by professional flutist Kim Anderson-Rasmussen throughout the evening.

A special guest will be Dr. Julio Bird of Gundersen Lutheran Medical Center, who will give a brief presentation on his experience climbing Mount Everest.

Cocktails are at 5:30 (cash bar); and dinner will be served at 6:30.
