Simple salad goes great with steak
Good food doesnít have to be complicated to prepare. In fact, sometimes the simpler, the better! The key is to use really good ingredients.
Take, for example, this salami salad. I made it to serve with a grilled steak, another simple yet satisfying dish.
To make this salad, start with a good salamiópreferably dry-cured. And there is no substitute for fresh mozzarella. I used mozzarella that comes in bulk, and the pieces of cheese are about the size of grapes. Fresh mozzarella is creamy, not rubbery. Although itís not the season for local homegrown tomatoes, there are some fairly good tomatoes available.
I finished with extra-virgin olive oil and balsamic vinegar to taste.
The proportions are easy to adjust up or down, depending on the number of people you are feeding.
I think one could make a meal of this salad!
Salami Salad with Tomatoes and Mozzarella
1 lb. salami
6 tomatoes, diced
1/2 cup fresh basil leaves
Salt and freshly ground pepper
Extra-virgin olive oil
Vinegar
In a large bowl, combine salami, tomatoes, basil and mozzarella. Season with salt and black pepper to taste. Drizzle with olive oil and vinegar and toss well.
8-10 servings
