It’s good to start things off with a clean slate—the old tabula rasa, as it were in the Latinate.  A salad is no exception.  But this time of year, when you want to make the salad the main course, you need to build on something more than just greens.  For quick, fuss-free summer fare, I love to start with a bowl of bulgur wheat.  Its chewy, nutty goodness is the perfect starting point for a summer produce sound-off.  What’s more, bulgur wheat is the whole grain, cracked and steamed, which translates into great nutrition that doesn’t even need to be cooked; you just rehydrate it in a little hot water.
