Dinner, Round and Flat

When meals are feeling a little flat, round out your diet with a few intensely flavored ingredients. I like to top a crispy round of olive oil pastry with garlicky spinach and eggplant, salty olives and tangy cheese. While those are my Mediterranean must-haves, I also include tomatoes and roasted peppers from the New World to add color and sweetness. The cracker-like crust holds up very well when sliced into thin appetizer-sized wedges, but this pizza makes a great meal on its own with a simple green salad. Mapping out these great flavors from around the globe is a great way for dinner to take shape: round, flat and delicious—no debate.
