At Steak

When the main course is meat, I usually skirt over to take care of the sauce. There’s just something about the seeming simplicity of slapping a slab of beef onto a screeching hot skillet or the open flame of a grill—well, let’s just say I’m more of a pastry chef at heart. In terms of beef, I can make up a mean stew or respectable roast and many concoctions with ground meat ingredients. When it comes to steaks, however, I have expensive taste (another reason why they’re rare on our menu, pun intended). So, for National Beef Week, I thought I’d pull up a recipe once enjoyed by the famously carnivorous gourmand and writer Ernest Hemingway. That will give me a chance to slip down to the wine cellar and see what we might round up.

We know Mom needs a special treat this weekend, and—as I’m sure she’s taught you—breakfast is the most important meal of the day, so here’s a recipe that can start everyone’s day off right. Then again, if you finish your dinner, these treats can be topped with ice cream and fresh fruit for dessert. These waffles just can’t make up their mind. But they can (in fact, must) be made in advance, so you’ll have plenty of time to decide. And if Mom needs to help, she can do so on Saturday night, leaving someone else to man the waffle iron on Sunday morning.

In one of my previous jobs—that of culinary tour guide in Boston’s “Little Italy”—I used to lead small groups of eager tasters through my neighborhood on a slow-paced marathon of gastronomy. We’d wind through the cobblestone streets, step into small specialty stores for samples of star ingredients and I’d relay information about cooking and dining in the Mediterranean way. One of the most important stops was a visit to the greengrocer where, whether rain, snow, sleet or hail, I’d gather my group around the storefront (the store itself being too small to accommodate more than three people at once) and grab a basketful of the season’s best—from broccoli rabe and fennel to figs and moscato grapes.

Another “Week” is upon us; TV Turnoff Week. After mentioning this, reciting some statistics about TV-viewing and obesity rates is de rigueur, so I did a little research to support my own untested hypothesis on the matter. According to the US Department of Labor, US citizens over age 18 spend a full two-thirds more time watching TV than they do in preparing food and cleaning up after meals. Compare that with life just a few short generations ago, where most of a family’s time and labor went into what they put into their mouths.
